VineyardDeep in the heart of the Russian River Valley, we have a five acre gem of Sauvignon Blanc. As a tribute to Davis Bynum's lovely wife, we named the five acres Virginia's Block. The vines are planted in east-west rows in shallow gravelly Huichica loam. The vines are cane pruned and trained to open up the canopy to allow the sunlight to touch the fruit. These fruit clusters turn golden through harvest, as the flavors become fully mature.
The HarvestEarly winter showers were followed by a warm, dry beginning to the new growing season, setting the stage for an early bud break. Alternating overcast days and heat waves continued through spring and summer, with a particularly hot period in late June, and an unseasonal rain in July. Harvest came in record early fashion. We picked our Virginia's Block Sauvignon Blanc in early September at full maturity, with bountiful flavors and juicy acidity.
StyleThe wonderful tropical fruit character and vibrant acidity of Virginia's Block is a highlight of our 2014 Sauvignon Blanc. The fruit was whole cluster pressed, fermented with native yeast in neutral French oak barrels and stainless steel drums, and aged sur lie with periodic bātonnage to add complexity and nuance. In order to preserve the bright acidity and fresh fruit character, our Virginia's Block does not go through malolactic fermentation. After four months aging, we racked the wine to stabilize and settle in tank for a few months before bottling it unfiltered.
Taste ProfileThe 2015 Davis Bynum Sauvignon Blanc opens with wonderful notes of citrus, tropical fruit and peach, and finishes with a lovely lemon tart and grapefruit character. The wine has fresh, bright acidity that is complemented by a richness from the portion that spent time in old French oak barrels. Enjoy this wine with mild, creamy cheeses, herb marinated seabass, or Thai chicken salad.
