Taste Profile

The 2017 Davis Bynum Sauvignon Blanc opens with wonderful notes of citrus, green apple, tropical fruit and peach. The body of the wine is medium in weight with pineapple and herbal notes coming through on the clean finish which is balanced with fresh acidity. Enjoy this wine with mild, creamy cheeses, fresh green salads, oysters, salmon or shellfish.

Vineyard

Deep in the heart of the Russian River Valley, we have a five acre gem of Sauvignon Blanc. As a tribute to Davis Bynums second love, who he found later in life, we named the five acres Virginias Block. The vines are planted in east-west rows in shallow gravelly Huichica loam. The vines are cane pruned and trained to open up the canopy to allow the sunlight to touch the fruit. These fruit clusters turn golden through harvest, as the flavors become fully mature.

Style

We like to highlight the ripe fruit characteristics of Virginias Block, while maintaining the
acidity for the structure of the wine. The fruit was whole cluster pressed, and 75% fermented with native yeast while 25% was inoculated, in neutral French oak barrels and stainless steel drums, and 20% Acacia puncheons (10% new). We aged the wine sur lie with periodic bâtonnage to add complexity and nuance. In order to preserve the bright acidity and fresh fruit character, our Virginias Block does not go through malolactic fermentation. After four months aging, we racked the wine to stabilize and settle in tank for four weeks before bottling it unfiltered.

The Harvest
The local record for precipitation was set during the winter and spring of 2016-2017 as waves of showers swept over northern California, eventually ending with 60+ inches of rain for the season. This caused flowering and set to be irregular and prolonged, and the vines would eventually yield a little less fruit than average at harvest. Over the summer, warm sunny days in the Russian River were punctuated by scattered heat events, and the ensuing elevated night temperatures didnt drop below 60F leading up to harvest. Humidity hung in the air over the pick date on September 11, 2017, as light rain broke from the clouds.
