Our 2018 Clone 115 Pinot Noir opens with both fresh and dried cherry aromas, and a complex mix of cocoa powder and loamy earth. Dried cherry flavors combine with leather, plum and a slight note of tobacco as the acidity and tannins create pleasing structure which lasts through the long finish.
Davis Bynum wines showcase terroir, differences in flavor from distinct sites in the Russian River Valley. The Clone 115 Pinot comes from a small, 20 year old parcel growing at our Jane's vineyard, in a neighborhood called the Santa Rosa Plains in the heart of the Russian River Valley. The vine rows are oriented north and south, so the clusters get excellent exposure on both sides. Warm days allow the fruit to ripen while the cool nights allow the vines retain acidity, which makes the Russian River Valley a world class winegrowing region.
We hand-picked this block of Pinot Noir clone 115 and filled small tanks with the destemmed fruit. As fermentation progressed, one particular tank stood out for it's higher quality. Native yeast fermentation followed by native malolactic fermentation gave the wine a lot of complexity with the distinctive cherry and rose petal characteristics of clone 115 at it's heart. Fermentation took about 8 days, while an extra 2 days on the skins provided supple tannin structure and balance, which is the core of our desired style.
